Waterford restaurant listed in Lucinda O'Sullivan's top 20 in Ireland

Top Waterford restaurants all set for All-Ireland Irish Restaurant Awards

Everett's has received further recognition

Waterford restaurant Everett's has been ranked in the top 20 restaurants in Ireland by top food critic Lucinda O'Sullivan. 

Writing in the Sunday Independent, she describes Peter Everett as "the ultimate dedicated professional delivering on classically classy food that would cost three times the price in restaurants with culinary notions". 

She notes that Peter Everett returned to his native Waterford, opening in the former Wine Vaults, having worked in some high-end restaraunts in Dublin.

"With Jakub Glich out front, he has been delighting those who appreciate the finer points of good food ever since," she enthuses in her review. 

The restaurant is situated at 22 High Street, set in the remains of the 15th century John Collyn House.

A Waterford native, Peter grew up in Viewmount Park on the edge of the city. He studied culinary arts in Cathal Brugha street while working with Michael Quinn in Waterford Castle. While under Michael's tutelage, Peter was awarded Eurotoques Young Chef of the Year and has remained active in the organisation ever since.

The Waterford chef went on to work in Chapter One in Dublin before joining the team at Restaurant Forty One where he worked with Graham Neville as sous chef.

The opening of Everett's fulfilled Peter's long held desire to open his first restaurant back home where it all began. Peter is joined on his journey by co-owner and partner Keith.

The Waterford restaurant has garnered some top awards since it was established in 2018. 

It achieved a Michelin Guide Bib Gourmand Great Britain & Ireland 2023 and was a winner in the Waterford Business Awards 2022. 

It has also been included in a number of restaurant reviews including: Sunday Times - The McKennas’ Guides 100 Best Restaurants in Ireland 2023; Sunday Independent - Lucinda O’Sullivan’s 100 Best Restaurants in Ireland 2022; The Irish Times 100 Great Value Places to Eat 2022.
